I downloaded "ultracopier-mac-universal-binary-0.2.0.16", when I get About info on running app it shows "0.2.0.15" ?

Yes, it's bug packaging. You have the 0.2.0.16 version.

does version 0.3.0.5 (mac) work on latest OSX Lion? The "Add copy/moving" option is greyed out.

Normally yes, but I have do mistake in packaging I thinks. you can test other version here: http://files.first-world.info/ultracopier/
The version 0.3.0.6 should work when I will release it, because I will work hard on stabilisation (included on mac).
The *.dmg should work on mac, the debug version can work where the release version not work.
